Blueberry Streusel Cake

This cake is a real treat accompanied by either coffee, tea or a glass of milk.

Garniture
 ½ cup (100 g) brown sugar
 3 tbsp (24 g) all-purpose flour
 2 tsp (10 ml) ground cinnamon
 3 tbsp (42 g ) butter
 ½ cup (60 g) chopped pecans
Gâteau
 ¼ cup (55g ) butter, at room temperature
 ¾ cup (150 g sugar
 1 egg
 2 cups (250 g) all-purpose flour
 2 tsp (10 ml) baking powder
 ½ tsp (2 ml) salt
 ½ cup (125 ml) milk
 2 cups (300 g) fresh or frozen blueberries

Streusel

In a small bowl or with the food processor, mix brown sugar, flour and cinnamon. Mix in butter with a pastry blender or with a few pulses. Add nuts, mix only 3 seconds if using food processor. Reserve.

Set a rack in center of the oven. Preheat oven at 375 °F (190 °C). Grease and flour a 9 inch (23 cm) springform pan.

In a large bowl, beat butter until creamy. Add sugar and beat 2 Minutes at medium speed. Add egg and beat 2 Minutes.

In another bowl, mix flour, baking powder and salt. On low speed, add flour mixture alternating with milk until homogenous not more.

Mix in blueberries with a wooden spoon, if using frozen blueberries proceed promptly to prevent dough from getting stiff. Put batter in pan, sprinkle the streusel evenly on batter and bake 40 to 60 minutes until a toothpick inserted in center of the cake comes out clean. For more time: 5 minutes .
