Instant Pot Chicken Broth

What I like to make broth in the Instant Pot is that we no longer have to constantly monitor the cooking. While the device works for us we can go about our multiple daily occupations. One simply  have to choose the appropriate functions and proceed with the steps when the alarm sounds. Personally I prefer the taste of chicken broth prepared with raw chicken but I also sometimes include carcasses of roasted chicken with raw chicken.

 wings, neck, raw or roasted chicken carcasses OR whole chicken
 Green part of a leek
 1 onion, coarsely chopped
 1 rib of celery with leaves, coarsely chopped
 1 sprig of parsley
 1 sprig of thyme or a good pinch of dried thyme
 1 bay leaf
 4 whole peppercorn
 1 clove of garlic

Put the chicken in the inner pot and enough cold water to cover chicken by 1 inch. Select the "sauté" function, then "medium" or "normal" and put 20 minutes of cooking time without covering. Press the "start" button

When the alarm sounds, press cancel. Skim the scum and add remaining ingredients.

Bouillon de poulet

Secure lid, with pressure release button setting at pressure. Select "soup", at "low" or "less", put 30 minutes with keep warm at off. Press start.

When the end of cooking alarm sounds, press cancel and let the pressure release naturally until the metal pine is flush with the lid and lid open easily.
