Chocolate Date Cake

This cake with a glass of milk or coffee is without a doubt one of my favorite desserts. Your friends will surely ask you for the recipe and will be surprised to learn that it contains dates.

This cake can be frozen for 2 months.

 1 cup (190 g) chopped dates
 1 1/4 cup (310 ml) boiling water
 2/3 cup (125 g) vegetable shortening
 1 cup (200 g) sugar
 4 squares (56 g) unsweetened chocolate
 2 eggs beaten
 1 1/2 cup (170 g) cake and pastry flour
 1/2 tsp (2 ml) baking soda
 1/2 tsp (2 ml) salt
 1 tsp (5 ml) pure vanilla extract
 1 cup (163 g) chocolate chips
 1 cup (120 g) pecans

Place the dates in a medium bowl and pour boiling water over them.

Melt the chocolate over low heat in a double boiler or in the microwave at 50% power and reserve.

Set the oven rack in the center of the oven and preheat the oven to 350 ° F (180 ° C). Grease a 9 inches (23 cm) square pan.

In large bowl, beat shortening and sugar for 1 minute

Add chocolate and eggs and beat until smooth.

In a bowl, combine the flour, baking soda and salt with a whisk and fold into the wet preparation, beating until smooth not more. Scrape the bowl once during this step.

Blend in the date mixture including the soaking water.

Pour the dough into the greased pan and spread it with the spatula. Sprinkle with chocolate chips first and then with pecans.V

Bake for 45 to 50 minutes until a toothpick inserted into the dough comes out clean. Let the cake cool in the pan before serving.
