Cranberry Cake with Maple Sauce

Cake
 ¼ cup (60 g) butter at room temperature
 1 cup (200 g) sugar
  1 egg
 1 teaspoon (5 ml ) pure vanilla extract
 2 cups (250 g) sifted pastry flour
 2 teaspoons (10 ml) baking powder
 ½ teaspoon (2 ml) salt
 1 cup (250 ml) milk
 2 cups (200 g) cranberries
Maple Sauce
 ¾ cup (175 ml) maple syrup
 ¾ cup (175 ml) cream
 ½ cup (115 g) butter

The Cake

Set the rack in the center of the oven. Preheat oven to 350 ° F (180 ° C)

Butter a 9-inch square baking pan. Cover the bottom with a sheet of parchment paper.

In a large bowl, cream the butter. Add sugar and beat 2 Minutes. Add the egg and vanilla and beat 1 Minutes.

In another bowl, combine flour, baking powder and salt. Add one-third of the dry ingredients and half of the milk to the egg mixture.

Add the second third of the flour and the remaining milk. Beat until smooth. Stir in remaining dry ingredients and beat until smooth, no more. Stir in the cranberries.

Pour the batter into the pan. Bake for 30 to 40 minutes . Let stand 5 Minutes before unmolding on a rack. Let cool.

In a medium saucepan, bring all ingredients to a boil stirring constantly. Reduce heat and simmer 5 Minutes. Top each portion of cake with 3 tbsp. hot sauce.
