Creamy Tomato Black Garlic Fettuccini

If you become addicted to the taste of black garlic you can increase the amount indicated in the recipe.
The sauce can be prepared in advance and reheated just before serving.

 500 g (16 ounces) fettucini
 3 tbsp extra virgin olive oil
 4 shallots, finely chopped
 3 black garlic, peeled and very finely chopped
 250 g (2 cups) fresh or canned tomato
 1 cup heavy cream
 Salt and Pepper
 2 tbsp chopped fresh parsley
 2 tbsp chopped fresh basil (optional)
 30 g (1/2 cup) finely grated parmesan cheese

In a faitout or a medium pot, over medium heat, heat oil et cook shallots for 5 minutes stirring constantly with a wooden spoon. Add garlic and cook 2 minutes on low heat.

Add tomatoes and crush them with a potato masher. Bring to a boil, reduce heat and simmer 5 Minutes. Add cream and cook 10 Minutes.

In the meantime: Cook the fettucini according to the instructions on the package.

Add salt and pepper to taste, parsley and basil en cook 2 Minutes.

Coat pasta with sauce and sprinkle each serving with Parmesan cheese.
