Cooking Lobster in Instant Pot

During a lobster supper in the Mongrain family, we cooked part of the lobsters in a large pot of boiling salted water and another in the Instant Pot. It was a great opportunity for a taste test and we all found that the lobster was as good boiled as cooked in the Instant Pot.

In a 6 quarts Instant Pot you can cook 2 lobsters at a time but the cooking is so simple and fast that we cook 2 more while we ate the first. From now on when I have no more than 6 lobsters to cook I will use my Instant Pot.

With a steaming method it is better to kill the lobsters just before adding them to the inner pot. Lobster will suffer less because heat exchange is less effective than if it is immersed in a pot of boiling water. It is not difficult to do, simply insert the tip of a good knife in the head just above the horizontal line (see the white line on the head of the cooked lobster on my photo) and the lobster dies instantly.  It is not fun to do but a much better practice for the lobster.

Servings: 1 to 2

Preparation10 minsCooking10 minsTotal20 mins

 1 1/2 cup cold water
 2 tsp salt
 2 live lobsters, 1 to 1 1/4 pound each

1

Put the steamer rack in the inner pot and add the water and salt.

2

Kill the lobsters by inserting a knife deeply into the lobster's head (see the small white line on the lobster on the photo which shows where to insert the knife). The lobster dies instantly.
Remove the rubber bands and immediately put the lobsters in the Instant Pot.

3

Secure lid with the steam pressure release button in the pressure position. Select "pressure or manual", set 4 minutes to "high with keep warm at off". Press "start". The appliance will take approximately 5 minutes before starting to cook.

4

When the end of cooking alarm sounds, release the pressure immediately, remove the lid and take out the lobsters.

  2. Yuo can also put the live lobsters in the freezer for about 20-30 minutes, This puts them in a deep state of sleep and when you add them to the IP, they won’t feel a thing. It’s the most humane way to do it.

  4. Merci pour la recette! My partner and I tried it last night. Alas, the knife cut did not kill the lobsters instantly. The rest of the recipe worked though, thank you for posting!

Read all my tips on cooking lobster. Contrary to popular belief, to obtain tender flesh, seafood such as lobsters, shrimp and crabs should be simmered, not boiled.
