Sweet Potato Soup

If fresh orange juice is not available, it can be replaced by a frozen orange juice concentrate by diluting 1 part of concentrate to 4 parts of water.

  4 cups, peeled and thickly sliced sweet potato
  1 onion, sliced
  2 cloves of garlic, peeled
 1/2 tsp (2 ml) dried thyme
 2 tbsp (30 ml) fresh or frozen chopped parsley
 1 cup (250 ml) freshly squeezed orange juice
 4 cups (1 litre) chicken broth
 1/8 to ¼ tsp (0,5 ml to 1 ml ) Cayenne Pepper
  Salt
 1 tbsp (14 g) butter

In a large casserole, put all ingredients except Cayenne pepper, salt and butter.

Bring to boil, reduce heat and simmer 45 Minutes until vegetables are tender.

Purée the soup with a blender or a food processor.

Strain soup with a sieve or china cap, pour back into casserole and season to taste with salt and Cayenne pepper. Simmer 5 Minutes add butter and stir until melted.
