Raclette Casseroles

It is the ideal comfort food to serve during cold weather. You can prepare them the day before and refrigerate them until ready to put them in the oven. All you have to do is prepare a salad of greens to mix with a vinaigrette of white wine vinegar or cider vinegar while the casseroles cool out of the oven.

 4 cups potatoes, peeled and cut into ¾ inch cubes
 2 cups small broccoli florets
 28 g (2 tablespoons) butter
 2 tablespoons all-purpose flour
 1 ½ cup milk or 15% light cream
 250 g raclette cheese, sliced
 ¼ teaspoon ground pepper
 1/8 teaspoon ground nutmeg
 1 ½ cup cooked ham, diced

Cook the potatoes and broccoli in boiling water in separate pans. Drain and set aside.

Set the oven rack in the center of the oven. Preheat the oven to 400°F (200°C).

In a small saucepan, heat the butter without browning. Remove from the heat and whisk in the flour. Cook over very low heat for 1 Minutes ,stirring constantly. Remove from the heat and gradually stir in the milk. Return the saucepan to the heat and bring to a boil, stirring constantly with a wooden spoon. Reduce the heat and simmer for 3 à 5 minutes stirring frequently, until the sauce thickens.

Add half the cheese, the pepper and nutmeg. Stir until the cheese is melted,. Remove saucepan immediately from the stove. Set aside.

Divide the vegetables and ham in four 2-cup casserole dishes, then top with sauce. Cover with remaining cheese.

Bake 20 Minutes. Let stand 5 Minutes before serving..
