Maple taffy is easy to make and just as good as at the sugar shack! You can refrigerate it or make taffy on the snow.
Servings: 4
Very lightly butter the inside of a small, deep saucepan and pour in the maple syrup.
Bring to a boil over medium heat and simmer over medium-low heat, watching constantly, until the temperature of the candy thermometer reads 238 ° F (114 ° C).
Let stand 1 minute, then pour into a small plastic container. If a foam forms on the top of the taffy, remove it with a spoon.
Close the container and immerse it in cold water for 1 hour, leaving the lid out of the water.
Open the container and pour 1 tbsp. cold water on the taffy. Tilt the container so that the water covers the entire surface.
Refrigerate.
It is important to cook the maple taffy just before serving it. Before beginning to cook, fill large containers with clean compacted snow.
Shortly before serving the taffy, cook the taffy as described in step 1 and pour the hot maple taffy over the snow, forming long strips 1 inch wide. Let cool for 1 to 2 minutes. Wrap the taffy around thin wooden pallets or spoons.
