Apple Pie

There's nothing better than a classic Apple Pie made with local apples!

 2 unbaked 9-inch (23-cm ) pie crusts
 100g (1/2 cup) sugar
 3 tablespoons all-purpose flour
 1 pinch of salt
 600 g (5 cups) apples, peeled, cored and sliced
 28 g (2 tablespoons ) butter
 1 egg beaten with 1 tablespoon milk

Set the oven rack in the bottom of the oven. Preheat the oven to 425°F ( 220°C ).

Place a crust of dough in a pie pan.

In a large bowl, combine sugar, flour and salt. Add apples and toss to coat. Pour into the crust, sprinkling remaining sugar mixture over the apples as well. Dot with diced butter.

Using a pastry brush, brush the edge of the crust with the beaten egg. Cover with the second crust and gently press the edge to seal. Using the blunt side of a knife, cut off the excess dough. Scallop the edge of the pie using your thumb and index finger or the back of a fork. Brush the pie, except the edges, with the beaten egg. Make two 2-inches (3-cm) incisions in the center of the pie.

Bake in the oven 15 Minutes, reduce oven temperature to 375°F (190°C ) and bake for 25 to 30 minutes , until the pastry is golden brown. Cool before serving.
