Instant Pot Lemon and Green olives Chicken

 4 boleless,skinless chicken breasts or 8 chicken drumsticks
 Salt and pepper
 4 tablespoon (60 ml) extra virgin olive oil
 1/2 to 1 teaspoon (2 ml to 5 ml) ground cumin
 16 large pitted green olives
 2 tablespoon (30 ml) freshly squeezed lemon juice
 1 cup (250 ml) chicken broth

Lightly salt and pepper the chicken.

Select "saute" to "medium or normal", put in 15 minutes and start cooking as soon as the inner pot is hot. Pour the oil and cook the breasts on both sides until lightly browned (the breasts should not touch each other if necessary cook 2 breasts at a time). Press "cancel".

Add the cumin, olives, lemon juice and broth. Secure the lid with the pressure button in the activated position. Select "pressure or manual", set the cookint time to 8 minutes for the breasts and 11 minutes for the drumsticks to "high" with "warm to off". Press "start". (The unit will take about 5 minutes to start cooking).

When the end of cooking alarm sounds, release the pressure. Serve chicken and cooking broth in hollow bowls.
