Cucumber Relish

Enjoy this relish in hot-dogs. To add color, you can add finely chopped red pepper.

  Large cucumbers
 1 cup finely chopped onion
 1 tbsp salt
 1 1/4 cup white vinegar
 3/4 cup (150 g) sugar
 1/2 tsp ground black pepper

Cut the cucumbers lengthwise. Remove the seeds with a spoon and chop in a meat grinder to obtain 6 cups. Place in a large glass or stainless steel bowl and add onion and salt. Let rest 1 hour.

Place the jars in a large pot, cover with water, bring to a boil and turn off the heat. Leave the jars in boiling water until ready to fill jars.

In a small saucepan put the lids, cover with water, bring to a boil and remove from the heat. Leave the lids in hot water until ready to close jars.

Perfectly drain the vegetable in a strainer.

In a large stainless steel saucepan, bring the vinegar, sugar and pepper to a boil. Add the vegetables and remove from the heat.

Pour the relish into the hot jars, close the jars and place on a wire rack in the pot of hot water, spacing them apart. There should be 1 inch of water on top of the jars. Bring to a boil and boil 8 Minutes. Remove jars frome the pot and cool completely before storing.
