An ideal pie to prepare with fresh local tomatoes.

Tomato Pie

 3 fresh sliced tomatoes
 1 unbaked 9-inches pie crust
 1 tablespoon olive oil
 1 medium onion, finely chopped
 1 large clove of garlic, finely chopped
 1 1/2 teaspoon Dijon mustard
 250 g (2 1/2 cup) grated Saint-Benoît , swissl or mozzarella cheese
 1 tablespoon finely chopped fresh basil OR 1/2 teaspoon dried basil
 Freshly ground black pepper
 A few black olives, pitted and halved (optional)

Place the tomatoes slices on paper towel, sprinkle with salt and let stand for 30 Minutes.

Set the oven rack in the bottom of the oven. Preheat the oven at 400°F.

Place the crust in a pie plate and bake for 15 Minutes. Remove from the oven and let cool before adding the filling

Meanwhile: Heat the oil in a frying pan and cook the onions for 8 Minutes, stirring occasionally. Add the garlic and continue cooking for 2 Minutes. Reserve.

Pat the tops of the tomato slices with paper towels to dry.

Brush the bottom of the cooled pie crust with mustard, spread a third of the cheese and cover with half the tomatoes, onions, garlic and basil. Season lightly with salt and pepper. Spread the second third of the cheese as well as the second half of the tomatoes, onions, garlic and basil. Season lightly with salt and pepper. Cover with the remaining cheese.

Bake in the oven 30 Minutes until the crust and cheese are golden brown. Cool a few minutes before serving.
