When harvesting the last vegetables of the season, we often discover large forgotten cucumbers, hidden under the foliage. These cucumbers, less good to eat raw or in salads, are delicious cooked. As I have not had much success growing this vegetable since I live in the Charlevoix region, it is with pleasure that I accept the surplus of large cucumbers to prepare this white wine-flavored cucumber soup and this relish delicious in hot dogs.
