Instant Pot Cretons (Quebec pork pâté)

What could be better than homemade cretons spread on toasts for breakfast! At lunchtime, serve them with crusty bread and a beet salad.

Homemade Sling Support

If you do not have a silicone sling for Instant Pot, prepare one with a strip aluminum foil. Overlap two 2-foot lengths of aluminum foil, fold in half lengthwise. Place the cooking mold in the center just before placing it in the inner pot of the Instant Pot. Fold the ends several times to form handles. Lift the mold with these handles to put it into the Instant Pot.

Note that the total cooking time takes into account the time it takes for the Instant Pot to begin cooking, cooking and the standing time before the steam is released.

 1 small onion, finely chopped
 1 teaspoon of salt
 1/2 teaspoon ground black pepper

Refrigerate in the mold or divide into small jars. The cretons will keep for 5 days in the refrigerator and 6 months in the freezer. Thaw in the refrigerator.

  1. Why would you not sautéed the meat first? I also love my cretons with fresh cut up garlic which is not mentioned in the recipe, I imagine I can modify the recipe to my particular tastes.
