Italian Tuna White Beans Salad

This Italian classic can be prepared in no time with a can of tuna and a can of white beans.

This classic of Italian cuisine is ready in no time. It’s an ideal healthy salad for a light meal and the lunch box. It contains all the proteins necessary for a meal. It can also be prepared with tuna in water with 3 to 4 tablespoons of olive oil rather than 2.

 1 can of 15-ounces/540 ml (2 cups) cannellini white beans or other white beans
 1 can of 5-ounces/170 g tuna (preferably in olive oil)
 Half a small red onion, thinly sliced
 2 tablespoons of extra virgin olive oil
 1 tomato, diced (optional)
 1 tablespoon chopped fresh basil (optional)
 Salt and freshly grind black pepper

Drain and rinse beans under cold water and put them in a medium bowl.

Drain the can of tuna reserving some of its oil. Break the tuna into pieces.

Add the tuna, onion and olive oil to the beans. Season with salt and pepper and gently mix.

Divide between two bowls and garnish with tomato and basil if using.
